gluten free vanilla cinnamon bread recipe

Ingredients:

  • 1/2 cup Butter, softened (1 stick)
  • 1 cup Sugar
  • 1 Tbsp Nielsen-Massey Vanilla Sugar
  • 1 Egg
  • 1 cup Buttermilk
  • 2 cups Gluten Free Flour mixture*
  • 1 tsp Baking Soda

Topping and Sugar Mix:

  • 2/3 cups Sugar
  • 1 Tbsp Nielsen-Massey Vanilla Sugar
  • 2 tsp Cinnamon

*Use your favorite bend, I normally would suggest 1 1/3 cups White Rice Flour and 2/3 cup Tapioca Starch. Right now I’ve been trying out Bob’s Red Mill’s 1 to 1 Gluten Free Flour Blend, and that is what I used to make these!

Directions:

  • Preheat your oven to 350 degrees.
  • In your mixer, combine your sugars and butter until smooth. When the mixture is light and fluffy. Add your egg and mix until combined.
  • In a medium bowl combine your flour and baking soda.
  • Start adding your dry ingredients and butter milk to your butter mixture by alternating dry then wet. When everything is combined.
  • Grease a loaf pan and pour in half of your bread batter.
  • In a small bowl combine your topping ingredients. Pour half into your loaf pan and use a knife to spread it around.
  • Pour the rest of your batter into the pan. Smooth it out to make sure it covers the top of the lower layer. Spread the rest of your sugar mixture on top.
  • Bake for 45 minutes, or until a tester comes out of the center clean.
  • Allow to cool in pan for 30 minutes before moving to a wire rack to cool completely.
