We’ve been team Cauliflower here for a few months now. It amazes me every time I try a new recipe with it, what starchy side it can replace. But there have been some I haven’t found a good replacement for, like tater tots – that is until now! This recipe for Cheesy Cauliflower Tots only requires 4 ingredients, is pretty easy to do make and makes over 5 dozen (or more) tots! You will get your hands messy making these tots, but the time invested will result in a great side for a meal or two!
Ingredients:
- 1 medium head of Cauliflower, chopped into small to medium florets
- 2 Eggs
- 1 Cup Ian’s Gluten Free Italian Panko
- 1 Cup Shredded Cheddar Cheese
Directions:
- Preheat your oven to 400 degrees
- Rinse your chopped cauliflower and place in boiling water for 10 minutes until they start to soften.
- Remove from heat, drain and work in small batches in your food processor and chop into small bits (think the consistency of tater tots)
- Pour into a large bowl and add in your remaining ingredients. Mix together until well combined.
- Using your hands, press the mixture into tot shapes, repeat until all of your mixture is used.
- Bake for 15 minutes, flip and bake for an additional 20 minutes.
