gluten free brookie recipeWhen you can’t decide between having warm chocolate chip cookies or brownies – you end making both in one delicious dessert bar – Brookies! Baked together, and great for enjoying with a tall glass of milk. This is an easy recipe to make from scratch and of course gluten free.

gluten free brookie recipeCookie Layer Ingredients: 

  • 1/2 cup Butter, softened
  • 1/2 cup Light Brown Sugar
  • 1/4 cup Sugar
  • 1/2 tsp Vanilla
  • 1 egg
  • 3/4 cup White Rice Flour
  • 1/2 cup Tapioca Starch
  • 1/2 tsp Salt
  • 1/2 tsp Baking Soda
  • 1 cup Chocolate Chunks

Brownie Layer Ingredients: 

  • 1 cup Sugar
  • 1/2 cup Butter, melted
  • 1 tsp Vanilla
  • 2 eggs
  • 1/3 cup Cocoa Powder
  • 1/4 cup White Rice Flour
  • 1/4 cup Tapioca Starch
  • 1/4 tsp Baking Powder
  • 1/8 tsp Salt

Direction:

  1. Preheat your oven to 350 degrees and grease a 8″ x 8″ baking dish.
  2. First make your cookie layer: Cream together your butter, sugars and vanilla. Add in egg and beat until smooth. Add in your salt, baking soda, white rice flour and tapioca starch. Beat until all are smooth. Slowly mix in your chocolate chunks.
  3. Place your cookie batter in a the bottom of your baking dish and make sure it covers the whole bottom of the dish.
  4. Now make your brownie layer: Mix together your melted butter, sugars and vanilla. Add in your eggs and mix until well combined. Add your cocoa powder, white rice flour, tapioca starch, baking powder and salt.
  5. Pour your brownie layer over the top of the cookie layer.
  6. Bake for 45-50 minutes or until a tester comes out clean. Cool completely and enjoy!
