There are so many things to love about this recipe: it’s extremely easy to make, it integrates veggies that your kids might not want to eat, it makes enough for a small army. I could probably eat this by itself, but just add a piece of chicken and you have a full meal!
Ingredients:
- 2 cups of Chicken broth
- 1 cup of Long Grain Rice (I used Jasmine)
- 1 Tbsp Butter
- 1 Zucchini, shredded
- salt and pepper to taste
- 1 cup Cheddar cheese, shredded
Directions:
- In a medium sauce pan add in your butter broth and rice. You can add your salt and pepper here if you want as well. I put a pinch of each in.
- Bring to a boil, then reduce your temperature to medium and cook on low for about 20 minutes. Don’t stir except to check to see if its done.
- Remove from heat, add in your zucchini and shredded cheese and stir. Replace your lid and let it sit for about 5 minutes. The heat from the rice will melt the cheese, and warm up the zucchini.
- Stir again and serve warm. This is great hot off the stove, or reheated later.
