Do you know how hard it is to take a picture of a layer salad and make it pretty? Oh my goodness! This is one of our family favorite recipes that while it’s normally a recipe for spring and summer, we have it all year with holiday meals or just because we want it. It’s got the greens, the veggies, cheese, bacon and all of the goodies that make a salad good!
Ingredients:
- 1 bag of mixed greens, or Romaine
- 1 bag frozen peas, thawed
- 1 medium onion, chopped
- 3 Roma Tomatoes, chopped
- 1/2 lb Bacon cooked, crumbled
- 1 cup Mayo*
- 1 cup Sour Cream*
- 1/4 cup White Sugar
- 8 oz shredded Cheddar
Directions:
- In a 13″ x 9″ glass casserole dish, put all of your greens at the bottom.
- Pour your thawed peas over top and spread them out evenly. Top with chopped onion and tomatoes and then crumbled bacon.
- In a small bowl mix together your mayo, sour cream and sugar. *You can also just do 2 cups of Mayo if you don’t want to use sour cream, we’ve done both and it still tastes great. Mix until smooth and spread it over the top of your salad so far. Try to get it as smooth as you can.
- Top everything with cheese. Wrap it tightly and put it in the fridge to chill for about 30 minutes before eating. Enjoy!
