We’re only a few week away from Valentine’s Day and if you’re like me, you’re still recovering from the holiday season. Sure I could go out and buy some candy from the store, or some silly toy. But why? I could spend a little time in the kitchen and make some delicious homemade truffles with items I already have in the pantry. Not only are they chocolate mint truffles relatively easy to make, but you’ll end up with several dozen so you can share with some of your friends as well!
Ingredients:
- 2 bags of Semi-Sweet Chocolate chips (approximately 24 oz)
- 1 Tbsp Butter
- 1 can Sweetened Condensed Milk (14 oz)
- 1 tsp Peppermint Extract
- 1 tsp Vanilla
- 1 tsp Chocolate Extract
- 3 cups Milk chocolate or White Chocolate Chips + additional (if you like a thicker coating on your truffles)
Directions:
- In a medium saucepan combine your semi-sweet chocolate chips and butter. Heat over medium low heat and stir constantly until melted and smooth. Once smooth, remove from heat immediately.
- Stir in your condensed milk and extracts. Once combined, pour your mixture into a large mixing bowl and beat on high speed for about 2 minutes.
- Allow to cool for about 15 minutes and beat again for another 2 minutes.
- On a cookie sheet lined with parchment or a baking mat, ball the chocolate mixture into 1 inch balls and set about 1 inch apart. The mixture may be a bit crumbly, so you may need to press them together. This will make approximately 60 “filling” balls. Place in your refrigerator for 1 hour until they firm up.
- In a medium bowl, add your milk (or white) chocolate chips and microwave 30 seconds at a time mixing in between until smooth. Dip your filling balls in the chocolate and roll them in the chocolate. Place back on the cookie sheet and repeat until all are covered. Sprinkle tops with glitter or candy bits to top. Place back in the refrigerator for 1 hour.
