Homemade Chicken Fajita Mix Recipe
I love fajitas, they always seem to hit the spot! Fresh warm tortillas, sizzling chicken and some fresh veggies. Add some sour cream and cheese and it’s almost the perfect meal. The problem at home – finding a gluten free mix that isn’t filled with gluten and other things. So instead, I make my own gluten free fajita mix, make my own gluten free flour tortillas and we have a great dinner! Even the left overs are great!

Homemade Chicken Fajita Mix Recipe

Gluten Free Fajita Seasoning Mix

  • 1 tbsp Cornstarch
  • 2 tsp Chili Powder
  • 1 tsp Salt
  • 1 tsp Smoked Paprika
  • 1 tsp Sugar
  • 3/4 tsp Chicken Bouillon granules (Massel or another gluten free brand)
  • 1/2 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Red Pepper Flakes
  • 1/4 tsp Cumin

Directions: 
Add all ingredients to a small bowl, mix together.

1 recipe will make the equivalent of 1 package of store bought.

Chicken Fajita Recipe

  • 1 lb Boneless skinless Chicken breast
  • 1 Gluten Free Fajita Seasoning Mix
  • 3 Tbsp Lemon Juice
  • 1 Tbsp Lime Juice
  • 1 Onion Sliced
  • 2 Green Peppers Sliced
  • 2 Red (or yellow) Peppers sliced
  • 2 Tbsp Canola Oil

Homemade Chicken Fajita Mix Recipe

Directions:

1. Slice your chicken breasts into 1/4 in strips or less. Add to a large resealable bag. Add in your fajita seasoning mix, lemon and lime juice and seal the bag. Use your hands to combine and coat your chicken strips well with the mixture. Set aside on the counter to marinate and bring to room temperature (approximately 30 minutes). You also can marinate your chicken in the fridge for 1-4 hours before hand. If you are making your own tortillas, this is a great time to do it. Or take this time to slice your veggies into thin strips.

2. Add your oil to a cast iron skillet, or a large cooking skillet. Wait until your oil and pan are hot. Drain any extra liquid from your chicken mixture and dispose of the liquid. Add your chicken to the hot pan and cook 4-6 minutes until your chicken in cooked through.

3. Add your sliced peppers and onions to the hot skillet and cook with your chicken and seasoning until soft and slightly brown.

Serve immediately with your favorite toppings! They will be better than any you find in your local Mexican restaurant!
