I love fresh salads, let’s just say I’m not always a fan of greens but all of the stuff on top. I have always love Waldorf Salads – not the marshmallow version some people serve at weddings, but the one full of apples, grapes and walnuts. It’s fresh, and I’ll admit it – I even like it over romaine.

Ingredients:

  • 1/2 cup chopped, slightly toasted walnuts
  • 1/2 cup celery, thinly sliced
  • 1/2 cup red seedless grapes, sliced (or a 1/4 cup of raisins)
  • 1 sweet apple, cored and chopped – I used Gala
  • 3 Tbsp mayonnaise
  • 1 Tbsp fresh lemon juice
  • Salt
  • Pepper
  • Romaine

Directions:

  1. In a medium bowl whisk your mayo, lemon juice and salt and pepper together until smooth.
  2. Add in your chopped apples, celery,walnuts and grapes.
  3. Serve on a pile of fresh greens
  4. Enjoy!
