Tuna Spaghetti

What’s for dinner tonight? Like many people you may be looking for a meat free alternative. How does a nice Spaghetti sound? Delicious right? I was a bit hesitant at first trying Tuna Spaghetti – I’m use to meat balls, or a meat sauce! But Starkist provided me with a great recipe to try, and I’ll admit it was delicious. It is another quick recipe, and you can prepare it with things that most of us keep in the cupboards.

Ingredients:

  • (1 ½) cups diced onion
  • (3) cloves garlic, chopped
  • (2) tablespoons oil
  • (3) 14 ½ ounce cans stewed tomatoes
  • (1/3) cup sliced pimiento-stuffed green olives
  • (¾) teaspoon salt
  • (½) teaspoon black pepper
  • (½) teaspoon Italian seasoning
  • (2) 2.6-ounce Starkist Flavor Fresh Pouch® Albacore White Tuna, drained
  • (1) 16-ounce box spaghetti, cooked and drained

Directions:

  1. Saute onion and garlic in oil in a skillet over medium-low heat 6 minutes, until onions are translucent.
  2. Add stewed tomatoes, green olives, salt, pepper and Italian seasoning.
  3. Cook over medium heat 20 minutes.
  4. Add tuna; heat through.
  5. Pour over 1-pound box spaghetti, cooked and drained.

This recipe was adapted by Family Circle for Starkist! Let us know if you make it – it’s a great option for dinner during Lent! The only thing I did different when making this recipe this week was I left the olives out, used the Garlic and Herb Tuna packet and used gluten free brown rice spaghetti. It was delicious!
