Summer Squash Casserole – Gluten Free

Squash Casserole Recipe
So a few years ago, I was part of a board for an organization. We were treated to a week in a mansion in the mountains of Georgia. Massages, personal chef, sun baking – oh my! One of the things the chef made for us was a Squash Casserole. Before that trip I had never had it. Unfortunately the recipe was not gluten free!

When I got home, I recreated his recipe. I made sure I could have it gluten free. Please note you can make this gluten free just by changing the last ingredient to gluten free bread crumbs or more Parmesan cheese. It’s one of my favorites in the summer time!

Ingredients

  • 2 tsp Salt, divided
  • 1/8 tsp Sugar
  • 6 Medium Yellow Squash, sliced
  • 2 tsp Butter, at room temperature divided
  • 1/2 cup Cheddar Cheese, shredded (remember to shred your own if you’re gluten free!)
  • 8 oz Sour Cream
  • 5 Green Onions, thinly sliced
  • 1/2 cup Parmesan Cheese
  • 1/4 cup bread crumbs (for gluten free use an additional cup of Parmesan Cheese or use gluten free bread crumbs!)

Directions

  • Preheat oven to 350 degrees.
  • Add 1 teaspoon of salt and sugar to water and simmer sliced squash over low heat, covered for 15 minutes.
  • Drain squash and return to pan.
  • Add butter and blend with squash.
  • Stir in cheddar cheese, sour cream, green onions, remaining salt and parmesan cheese.
  • Pour squash casserole dish, use a spoon or spatula to even the mixture out.
  • Sprinkle bread crumbs (or Parmesan Cheese) over the top of the mixture.
  • Bake for 30 minutes

I serve this with BBQ Chicken, and fresh veggies. It’s a delicious taste of summer and great when the veggies are in season! Let me know if you make it!
