Gluten Free Strawberry Lemonade Cake

As temperatures rise, I know I’m going to start craving strawberries, ice cream, lemonade and cake. Combined together they can be the perfect dessert and way to enjoy a warm summer day. Last year I came up with the perfect recipe for a lemonade cupcake -it’s soft, spongy and gluten free. It was the first recipe I thought to try when Good Cook sent me their new Bake-a-Bowl pan to review. But I wanted to take it one step further, fresh berries and add ice cream and of course whipped topping. Similar to strawberry shortcake, the strawberry lemonade cake actually has a bit of a tart flavor that plays well with the strawberries and toppings.

Good Cook Bake a Bowl

Ingredients:

  • 1 cup White Rice Flour
  • 1/2 cups Tapioca Starch
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 stick butter -room temperature
  • 2 oz cream cheese
  • 1 cup Sugar
  • 3 large eggs
  • 6 Strawberries chopped coarsely
  • 1/2 cup Milk
  • Juice from 1 lemon
  • zest of one lemon

Additional Toppings:

  • Vanilla Ice Cream
  • Strawberries
  • Whipped Topping

Good Cook Bake a Bowl

Directions:

  1. Preheat your oven to 325 degrees.
  2. In your mixer beat together your butter and cream cheese. Add your sugar and beat until fluffy.
  3. Add your eggs, one at a time and mixing in completely after each egg. Slowly add in your strawberry chunks.
  4. In a large bowl whisk together your white rice flour, tapioca starch, baking powder and salt.
  5. Slowly add in your dry ingredients 1/3 at a time, alternating between the dry and your milk.
  6. Zest your lemon over the bowl and squeeze in the juice from the same lemon. Mix for 1-2 minutes until completely mixed.

Now to bake them!

Step One: 

Prepare your Bake-a-Bowl Pan by spraying the inside of the bowls, and the underside of the top piece.

Step Two:

Pour your cake batter into the cups up to the line that is marked inside.

Step Three: 

Place the top on the pan, making sure you insert the tabs into the slot.

Step Four:

Bake 25-30 or until a tooth pick comes out of the center cleanly.

Allow to cool in the pan for about 15-20 minutes before topping!

Time to make the strawberry topping!

Ingredients:

  • 1 qt Strawberries, hulled and chopped
  • 2 Tbsp Sugar

Direction:

  1. Place all of the strawberries in a shallow dish or pie plate. Add in the sugar on top. Let sit about 5 minutes. Use a potato masher to smash them together.
  2. Get ready to top your Sundae!

Good Cook Twister Ice Cream Scoop

The Good Cook Bake-a-Bowl pan was so easy to use. I was happy with how quickly the cakes released and none of them tore on the way out. I also like that they come out with a flat bottom, so the cakes can sit up on their own, and you don’t have to worry about it toppling over!

Good Cook also sent over one of their Twister Ice Cream Scoops for me to test. It’s suppose to get hard ice cream out with one easy twist. I used it for our sundaes and other desserts, and I can say honestly I never struggled with the ice cream. Each scoop came out smooth and easily. I don’t know if the scoop did it, or if the ice cream just was that smooth – but it sure made getting ice cream easy!

  1. I would make brownie bowls to eat with ice cream and hot fudge. There are endless possibilities to what you could make them for.

  2. How creative! I know I’d have a lot of fun with this. I think I’d start with cornbread bowls for chili, then maybe some brownie bowls for dessert!

  3. I would have to make something with brownies, chocolate ice cream and cool whip maybe some chocolate drizzle… yumm

  4. I would first make carrot cake in my Bake-a-Bowl Pan. I’ve had a hankering for it lately but this pan seems like the sky’s the limit. I think it would be hard to run out of options.

  5. I would make brownie bowls so that I could build a brownie sundae, with vanilla ice cream, nuts, whipped cream and hot fudge!!
