Ingredients:
- 1 cup White Rice Flour
- 1/2 cups Tapioca Starch
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1/2 stick butter -room temperature
- 2 oz cream cheese
- 1 cup Sugar
- 3 large eggs
- 6 Strawberries chopped coarsely
- 1/2 cup Milk
- Juice from 1 lemon
- zest of one lemon
Additional Toppings:
- Vanilla Ice Cream
- Strawberries
- Whipped Topping
Directions:
- Preheat your oven to 325 degrees.
- In your mixer beat together your butter and cream cheese. Add your sugar and beat until fluffy.
- Add your eggs, one at a time and mixing in completely after each egg. Slowly add in your strawberry chunks.
- In a large bowl whisk together your white rice flour, tapioca starch, baking powder and salt.
- Slowly add in your dry ingredients 1/3 at a time, alternating between the dry and your milk.
- Zest your lemon over the bowl and squeeze in the juice from the same lemon. Mix for 1-2 minutes until completely mixed.
Now to bake them!
Step One:
Prepare your Bake-a-Bowl Pan by spraying the inside of the bowls, and the underside of the top piece.
Step Two:
Pour your cake batter into the cups up to the line that is marked inside.
Step Three:
Place the top on the pan, making sure you insert the tabs into the slot.
Step Four:
Bake 25-30 or until a tooth pick comes out of the center cleanly.
Allow to cool in the pan for about 15-20 minutes before topping!
Time to make the strawberry topping!
Ingredients:
- 1 qt Strawberries, hulled and chopped
- 2 Tbsp Sugar
Direction:
- Place all of the strawberries in a shallow dish or pie plate. Add in the sugar on top. Let sit about 5 minutes. Use a potato masher to smash them together.
- Get ready to top your Sundae!
The Good Cook Bake-a-Bowl pan was so easy to use. I was happy with how quickly the cakes released and none of them tore on the way out. I also like that they come out with a flat bottom, so the cakes can sit up on their own, and you don’t have to worry about it toppling over!
