Sriracha Peanut Butter Ice Cream Recipe

Last year Peanut Butter and Company sent me a mystery ingredient, and it threw me for a loop. It seemed like it would be easy – what can’t you make with candy canes! But for some reason that threw me for a loop! I struggled with making a recipe with candy canes and peanut butter. So I was a little worried when they said they were sending me something else to work with. When the package arrived – I actually laughed a lot, inside with four jars of their peanut butter was a big bottle of Sriracha. The week before, I had just had a conversation with my boyfriend that I had never tried Sriracha, so the surprise ingredient sent me into a fit of laughter.

I was actually surprised at how much I liked the Sriracha, and it didn’t take much to get the ideas flowing! I found that it was actually a lot easier for me to come up with a recipe for this challenge. Since we had a party coming up and I wanted to make ice cream for everyone I went with a dairy free option. Instead of using milk or cream like I usually would, I used canned coconut milk.

Once you melt all of the ingredients together and it’s smooth – you end up with an extremely smooth and creamy ice cream. It’s refreshing and coconutty and spicy treat!

Sriracha Peanut Butter Ice Cream Recipe

Ingredients

  • 2 14 oz cans of coconut milk
  • 3/4 cup honey
  • 1/2 cup Bees Knees Peanut Butter
  • 1 tsp Vanilla
  • 2 tsp Sriracha Hot Sauce

Instructions

  1. In a large heavy pan combine your canned coconut milk, honey, peanut butter, peanut butter and vanilla. Over medium heat whisk until your mixture is smooth.
  2. Once everything is smooth, remove from heat and allow to cool to room temperature. While your mixture is cooling add in your Sriracha sauce and whisk it until smooth.
  3. Pour your ice cream into a prepared ice cream maker and prepare according to the machines directions (20-30 minutes).
  4. Place in a freezer safe container and freeze for a few hours for a firmer consistency.
