Split Pea and Ham Soup
At our market we have a vendor who sells organic grains. You can get everything from wheat, to spelt, heirloom grains and even dried peas and beans. A while back I grabbed some of the peas to make soup. I had never made split pea soup, or even had it but I wanted to try it. Paired with some ham from the butcher it was surprisingly easy!

Ingredients:

  • 1 small onion, chopped
  • 1 tbsp vegetable oil
  • 4 cups water
  • 1 1/2 cups chicken broth
  • 1-1/2 cups dried green split peas
  • 1 cup cubed fully cooked ham
  • 3 bay leaves
  • 1/4 tsp pepper
  • 1 1/2 tsp salt
  • 1/2 tsp dried rosemary, crushed
  • 1/4 tsp dried thyme
  • 1/4 tsp pepper

Directions: 

  1. In a large sauce pan put in your oil and onions. Sautee until soft and lightly brown.
  2. Add in your remaining ingredients and bring to a boil.
  3. Once boiling reduce heat to low and place your lid on the sauce pan. Continue to cook on low for about an hour. Stir occasionally.
  4. Serve and enjoy!
