Slow Cooker Mac & Cheese

I’m always amazed at what you can make in your slow cooker. From meat dishes to desserts and of course Mac & Cheese! This is such a simple recipe and all you do is combine everything and let it cook.

At first I was a bit worried about how gluten free noodles would handle a long cooking duration – but they came out great and didn’t fall apart! I did use shell noodles so they would grab more cheese but this will work with whatever noodle you want to use!

Ingredients: 

  • 1 bag of pasta (approximately 16 oz)
  • 4 TB butter
  • 4 cups shredded cheese – Cheddar, Colby, and Munster worked great!
  • 8 oz cream cheese, at room temperature, cubed
  • 3 cups of milk
  • 12oz evaporated milk
  • 1 cup sour cream
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika

Directions:

  1. Prepare your crock – spray the inside with Pam or use a liner.
  2. In your crock pot put your butter, cream cheese, milk, evaporated milk, sour cream, and spices. Mix well until it as smooth as possible. There will be lumps!
  3. Add in your pasta – uncooked. It will cook during the process and come out perfectly! Stir until well incorporated in the cheese mixture.
  4. Add 1 cup of your shredded cheese and mix it into the mixture and noodle.
  5. Top with remaining cheese and don’t mix.
  6. Cook on low for 3-4 hours. Do not stir, just let it cook together!
