Slow Cooker Lemon Garlic Chicken Recipe

slow cooker lemon garlic chickenIs there anything we can’t make in the slow cooker? Let’s just say I’ve been working on finding new and creative ways to use it. There’s nothing better than coming home to dinner done, making a quick side and salad and we’re eating dinner in under 15 minutes. This Lemon Garlic Chicken recipe is probably as easy as it gets, at the end you not only get bite sized pieces of chicken in a nice gravy but just add rice and you have a great meal! Oh, and did I mention it’s gluten free?

Ingredients: 

  • 2 lbs of Boneless Skinless Chicken
  • 1/4 cup Lemon Juice (juice from 1 yellow)
  • 2 cups Chicken Broth
  • 3 Tbsp Minced Garlic
  • 1 tsp Dried Oregano
  • 2 tsp Massel Gluten Free Chicken Bouillon
  • 2 Tbsp Butter
  • 1/4 tsp Salt
  • 1/4 tsp Fresh Ground Pepper
  • 1/4 cup White Rice Flour

Directions:

  1. Cut your chicken into 1 inch chunks and place it in a zip top back. Add in your white rice flour, salt and pepper and shake until your chicken is just coated. Pour the bag contents into your slow cooker crock.
  2. Add your lemon juice, chicken broth, garlic, oregano, chicken bouillon and butter to your slow cooker. Mix so everything is combined.
  3. Cook on High for 4 hours, or low for 7.
  4. Serve with rice or potatoes!
