When I know those days are coming, I toss something together in my slow cooker and just do a small a bit of work right before we eat. I can let it cook while I’m busy at work, or out for the day – and often most are complete meals waiting to be enjoyed. We’re huge pasta and lasagna lovers in this house, but I don’t make it often. Blame it on the amount of time that goes into it, let alone the calories. I’ve never had the best luck at making lasagna in my slow cooker, but that is always an option – but instead I make a mean lasagna soup! It has the taste of lasagna, less than a third of the work that goes into it, and probably a loss less calories.

  • 1 lb Italian Sausage or Ground Beef
  • 1 Medium Onion, chopped
  • 1 Tbsp Italian Seasoning
  • 2 Tbsp Chopped Garlic
  • 2 Tbsp Granulated Chicken Bullion (Massel for Gluten Free)
  • 3 cups Water
  • 1 22 oz can of Diced Tomatoes
  • 1 22 oz can of Tomato Sauce
  • 1 tbsp Brown Sugar
  • 16 oz Pasta of your Choice – we use Trader Joe’s Brown Rice pasta!
  • Ricotta cheese
  • Parmesan or Mozzarella Cheese

Directions: 

  1. Brown your ground beef in a skillet and drain off grease. Place your cooked meat at the bottom of your slow cooker’s crock.
  2. Add in your onion, garlic, seasoning, bullion, water, brown sugar and canned tomatoes and mix together. Cook on low for 6 hours or high for 4 hours.
  3. To server, cook your favorite pasta and put a cup in the bottom of your bowl. Ladle the soup over the top. Add a scoop of Ricotta and sprinkle with cheese.
