I always struggle when it comes to finding a dish to with chicken in the slow cooker. And since we eat primarily chicken as our protein in our house it can get frustrating. So, what do you do? For me – I throw in all of the ingredients I would to make a beef stew, change the spices and let it go. It comes out to be a thick and yummy chicken stew full of everything you need for an easy meal.
Ingredients:
- 1 lb Boneless, Skinless Chicken Breasts cubed
- 2 cups Carrots sliced
- 2 medium Potatoes cubed in 1 inch cubes
- 1 stalk Celery sliced
- 1 medium Onion chopped
- 1/4 cup Gluten Free Flour Mixture (or 1/4 cup White Rice Flour)
- 2 cups Chicken Stock
- 1 Bay Leaf
- 1/2 Tbsp Herb de Provence
- 1/2 cup Heavy Cream
Directions:
- Place your cubed chicken in the bottom of a large slow cooker. Add your spices and herb de provence and mix until fully coated.
- Add in your chopped veggies and mix again getting any left over flour off the bottom.
- Add in your cream and stock and mix well.
- Cook on low for 8 hours, mix occasionally if possible and serve warm.
