
Slow Cooker Chicken Fajitas
It was not only a hit in our house, but someone even grabbed a huge bowl (full) as snack before bed! This will be a regular recipe in our rotation now!
- 2 large Chicken Breasts
- 1 medium onion sliced
- 1 medium green pepper sliced
- 2 cups of salsa
- 1 can of green chiles (approximately 3 oz)
- 1 package of fajita seasoning – I used McCormick
- 2 Tbsp olive oil
Directions:
- Place all items in your crock and mix well.
- Cook on High 6 hours or low for 8.
- Shred Your chicken. I did this with the spoon in the pot, you can always remove it and add it back in. Mix well.
- Serve with Warm tortillas*, fresh romaine, roma tomatoes, cheese and sour cream. Use your favorite toppings
*To Warm your tortillas place them on a plate, cover with a damp piece of paper towel and microwave approximately 1 minute. They will be warm and “fresh steamed” just like at the restaurant!
