Want a nice stew that will warm you up from the inside and is full of bold flavors and goodness? Brunswick Stew has a smokey flavor that reminds me of almost a barbecue chicken stew, but with the vegetables it’s perfect for these cold winter days! Toss this recipe together and let it cook all day, you’ll be going back for more!
Ingredients:
- 1 lb boneless skinless chicken
- 1 can yellow corn drained
- 2 can butter beans drained
- 1 22 oz can tomatoes
- 2 white potatoes cut in cubes
- 1 medium onion chopped
- 2 ribs celery chopped
- 1/2 cup ketchup
- 1/2 cup barbecue sauce
- 2 tsp onion powder
- 2 tsp garlic powder
- 2 Tbs brown sugar
- 1 Tbs worcestershire
- 1 tsp hot sauce
- 2 Tbs butter
- 3 cups chicken stock
- 1/4 cup corn starch*
- 1 cup water*
*If needed
Directions:
- Combine all ingredients, except cornstarch and water, in a large crock pot. Stir well.
- Cook on high for 6 hours.
- After 6 hours remove your chicken and put your stew back on high.
- In a small bowl combine the corn starch and water and mix well. Add it to your stew.
- Shred your chicken into small pieces and place back in your stew.
- Turn off your slow cooker and enjoy!
My stew didn’t thicken how I wanted it to, instead it was more of a soup. That’s why I added the cornstarch and water. The small amount of time it takes to shred the chicken was enough for the combination to work and thicken it to a nice hearty stew!
