Seasoned Baked Potatoes Recipe

Baked potatoes take forever no matter how you make them. And once they’re soft and yummy – we always end up adding something to them. There is a way you can make them so you don’t have to add all of the stuff for flavor later, it super easy and they come out perfect the first try!

Ingredients: 

  • 4 medium russet potatoes
  • 2 tbs butter melted
  • 1 tsp salt
  • 1 tsp fresh ground pepper
  • 1 tsp parsley
  • 2 tbsp parmesan cheese (optional)
  • 1/4 cup shredded cheddar (optional)

Directions:

  1. Preheat your oven to 425 degrees. Wash your potatoes well.
  2. Slice all of your potatoes thinly into strips but stop before you go all the way through. This is slightly harder than you think – so if you find you have problems doing it you could stick a spoon on one side so your knife wont go all the way through. If you do cut it completely, just keep going and set it next to the the rest of the potato in the dish.
  3. In a shallow dish, put your sliced potatoes and lay them so the slices spread, or fan out some.  I used a pie dish – you don’t need anything tall for this but something that will keep them in place and will catch anything that drips off.
  4. Pour your melted butter over the sliced potatoes. Sprinkle your salt, pepper and parsley on top.
  5. Bake your potatoes for 50 minutes. Remove from the oven and sprinkle on your cheese if you want to top them. Return to the oven for an additional 10 minutes.
  6. Remove, plate and enjoy!

The slices are soft and tender, the skin is crisp and it’s all full of flavor. It’s much healthier than loading it with tons of butter, cream, cheese and bacon! Plus it’s a nice twist on the traditional!
