So you want to try canning, but you don’t want to heat up your house. You don’t want to stand in front of boiling pots for 30 minutes + waiting for the water to get right. You just want results! Have you thought of trying freezer jams?
Freezer jams are quick recipes that take a particular pectin. Small packs cost around a dollar for enough to make 2 jars. (If you got the paper 2 weeks ago the $1/1 Ball/Kerr Pectin coupon made these packs free at Walmart!).
So let’s try a quick and sassy recipe to start the freezer jams! After you make this you can enjoy it in the fridge up to 3 weeks, or freeze it for a year! The best part – no cooking is really involved.
Ingredients:
- 1 1/2 cups granulated sugar
- 1 pouch (1.59 oz/45 g) freezer jam pectin (2 1/2 of the freebie ones!)
- 2 chipotle peppers in adobo sauce
- 4 cups crushed red raspberries
Directions:
- Make sure you wash and sterilize your jars. Remember you want your food to stay good! You will need five (5) 8 oz jars.
- In a medium bowl, combine the sugar and the pectin. Stir well until blended.
- Chop your chipotle peppers well until almost a puree. If you don’t want a lot of spice – remove the seeds. Put in a large bowl with 2 tbsp of the adobo sauce.
- Crush your raspberries. Crush them good! Now add them to bowl with the peppers and sauce. Mix well.
- Dump your sugar and pectin mixture into the bowl. Mix the entire mixture for three full minutes. You’ll start to feel the mixture gel together.
- Now, ladle them into the jars. You have to leave 1/2 inch worth of head space. Remember frozen things expand, so this space is needed.
- Allow to sit at room temperature for 30 minutes. Now you can enjoy it or freeze it for up to a year!
How easy is that! You made a jam you can enjoy all year long!
