This time I decided to make a peanut butter banana bread – because peanut butter and bananas go so well together! The result is a moist and delicious bread with added protein and less junk inside – and yes, it’s gluten free!

  • 3 ripe Bananas
  • 1/2 cup Honey
  • 1/2 cup Applesauce
  • 2 eggs
  • 1 tsp Baking Soda
  • 1 Tbsp Baking Powder
  • 1 tsp Salt
  • 2 Tbsp Mighty Nut Vanilla Powdered Peanut Butter
  • 1 1/4 cup White Rice Flour
  • 3/4 cup Tapioca Starch

Directions: 

  1. Preheat your oven to 350 degrees and spray the inside of your bread pan with a non-stick cooking spray.
  2. In your mixer bowl mash your ripe bananas until smooth and add in your honey. Mix until just combined. Add in your applesauce and eggs one at a time and mix until combined.
  3. Slowly integrate your dry ingredients. Scrape down the sides of your bowl and mix again for 30 seconds.
  4. Pour into your prepared pan and bake for 50 minutes to 1 hour or until a tester comes out clean.
  5. Cool in pan for 10 minutes before moving to a cooling rack. Allow to cool completely before cutting.
