pavlova recipeI think I first saw Pavlova on a cooking show and was shocked at how fancy it was. It looked so delicate, so sweet, and so difficult. But that of course didn’t stop me from wanting to have some! I don’t know of any places near me that sell it, although I’d love to hear of some if anyone knows where some may be sold. But Pavlova is made of simple ingredients, and doesn’t include any flour, so it’s the perfect gluten free treat. I had to go into the kitchen and try to make some myself. Not only was it easier than I anticipated, but we had delicious results.

Ingredients:

  • 4 egg Whites
  • 1 cup Sugar
  • 2 tsp Cornstarch
  • 1 tsp Vanilla
  • 1 tsp Lemon juice
  • Sliced Strawberries for topping

Directions:

  1. Preheat your oven to 250 degrees and line a 9 x 13 baking sheet with parchment paper or a baking mat.
  2. In your mixer, mix your egg whites on low and slowly increase speed until you see soft peeks begin to form. Increase your speed to medium high and slowly integrate your sugar and corn starch. Mix for an additional 2-3 minutes.
  3. Add in your vanilla and lemon juice and continue to mix until you see stiff peaks and they appear shiny.
  4. Fill a pastry bag with a large tip with your mixture and pipe into 8 different round circles on the parchment paper on your baking sheet.
  5. Bake for 50-60 minutes until they are dry to the touch. Do not let them brown while baking. If you notice color change, reduce your oven temperature by 25 degrees.
  6. Cool completely and top with your sliced berries to enjoy!
