Let’s just say, the guys loved this pasta dish was just what the guys were craving when I sent it with my boyfriend for man night. It’s a mix of pasta, veggies and delicious feta cheese. While this dish is not gluten free, you could make it with a gluten free pasta instead of the orzo so you can enjoy it as well!
- 1/4 cup Red Wine Vinegar
- 2 tbsp fresh Lemon Juice
- 1 tsp Honey
- 1/2 cup Olive Oil
- Salt and Pepper
- 6 cups homemade Chicken Stock
- 1 lb Orzo pasta
- 1 package Red Cherry Tomatoes cut in half
- 1 7 oz crumbled Feta Cheese
- 1 cup chopped Fresh Basil
- 1 cup sliced Green Onions
- 1/3 cup Slivered Almonds
Directions:
- In a large 5 qt pot add your chicken stock and heat until boiling. Add in your orzo and cook for approximately 8-10 minutes until still firm but not over cooked. Drain off the additional stock and place the cooked orzo in a large bowl, rotate the pasta with a spoon occasionally until completely cooled.
- In a small bowl whisk together your vinegar, lemon juice, and honey. Slowly add in your olive oil and salt and pepper to taste. Set aside.
- Once your orzo is cool, toss with your vinegar mixture. Add in the tomatoes, feta, basil, slivered almonds and green onions. Toss until well combined.
- Serve at room temperature or cool.
