Orzo with Feta Cheese Pasta Dish Recipe

Let’s just say, the guys loved this pasta dish was just what the guys were craving when I sent it with my boyfriend for man night. It’s a mix of pasta, veggies and delicious feta cheese. While this dish is not gluten free, you could make it with a gluten free pasta instead of the orzo so  you can enjoy it as well!

  • 1/4 cup Red Wine Vinegar
  • 2 tbsp fresh Lemon Juice
  • 1 tsp Honey
  • 1/2 cup Olive Oil
  • Salt and Pepper
  • 6 cups homemade Chicken Stock
  • 1 lb Orzo pasta
  • 1 package Red Cherry Tomatoes cut in half
  • 1 7 oz crumbled Feta Cheese
  • 1 cup chopped Fresh Basil
  • 1 cup sliced Green Onions
  • 1/3 cup Slivered Almonds

Directions: 

  1. In a large 5 qt pot add your chicken stock and heat until boiling. Add in your orzo and cook for approximately 8-10 minutes until still firm but not over cooked. Drain off the additional stock and place the cooked orzo in a large bowl, rotate the pasta with a spoon occasionally until completely cooled.
  2. In a small bowl whisk together your vinegar, lemon juice, and honey. Slowly add in your olive oil and salt and pepper to taste. Set aside.
  3. Once your orzo is cool, toss with your vinegar mixture. Add in the tomatoes, feta, basil, slivered almonds and green onions. Toss until well combined.
  4. Serve at room temperature or cool.
