Tomorrow is Valentine’s Day – if you’re like me, you’ll be staying in and not going out in the craziness of the crowds. We’ve had too many bad Valentine’s going out over the years, so now we choose to stay in and enjoy a nice quiet dinner together. Since we haven’t yet had time to fix the electrical issue in the kitchen – making our traditional baked pasta wont work. So instead, we’re having boeuf bourguignon…
Yes, you heard it right – boeuf bourguignon (also called Beef Burgundy). The same thing that made Julia Child famous. I’ve made her recipe before and we loved it – but I can’t use the oven right now so we are going to have it make it another way – in the crock pot. No, I’m not kidding!
Here is the recipe, set it up before you go to work and let it cook while you’re busy. Enjoy with mashed potatoes, pasta, rice and veggies. I’ve schedule cream mashed potatoes and snap peas to pair with this.. I’m drooling already!
Ingredients
- ¼ cup flour
- ½ teaspoon salt
- ½ teaspoon pepper
- 2 lbs boneless beef chuck , cut into 1 inch cubes
- 2 tablespoons olive oil
- 1 bag of frozen pearl onions
- 8 button mushrooms , sliced
- ½ cup fresh parsley , minced
- 3 garlic cloves , minced
- 2 bay leaves
- 1 cup Burgundy wine
- ½ cup beef broth
Directions
- Combine the flour, salt and black pepper.
- Dredge the beef cubes in the flour mixture and brown in the olive oil in a medium skillet.
- Place the beef and remaining ingredients into the Crock Pot Slow Cooker and mix thoroughly and combine.
- Cover; cook on Low for 4 to 6 hours or on High for 2 to 3 hours.
