If you frequent Greek restaurants, or even locally Coney’s you’ve most likely ordered a Gyro or two. I love the sauce that you can get on them, also known as Tzatziki. It’s a fresh cucumber sauce and it’s so good for veggie dips and more. The best part, it’s super easy to make :).
Ingredients:
- 16 oz plain Greek yogurt (or sour cream)
- 2 cucumbers
- 3 garlic cloves, mashed to a paste
- 1/3 cup olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon minced fresh dill
- salt
Directions:
- Peel your cucumbers and cut into 3 sections. Halve each section and remove the seeds. Place cucumber chunks into a colander and sprinkle with salt – let sit for 5-10 minutes.
- Place your cucumbers in a food processor and blend until smooth.
- Add in your remaining ingredients. Blend until smooth.
- Refrigerate you Tzatziki for at least 2 hours before serving.
Tzatziki is great on gyros, as a dressing, or as a dip! It has a light and fresh flavor and is delicious year round!
