After a long day of working, sometimes I just to make a quick meal. For years I would go for a boxed meal, you know the type – just add some cooked meat and a little dairy. But once our food allergies and diets started to change, there have been a lot of things we had to cut out. While it does mean a more simple shopping with more whole ingredients, it did make it a bit harder to make a quick meal. That is, until I started playing in the kitchen. The result – a homemade version of the boxed meals using from scratch ingredients, some fresh ground turkey from the butcher – and it’s quickly become our go to meal at least once a week!
Ingredients:
1 lb ground Turkey
- 1 Tbsp Olive Oil
- 1 tsp Minced Garlic
- 1/2 Small Onion Chopped
- 8 Tbsp Homemade Cream Soup Base (or 1 can can of Cream of Chicken Soup)
- 2 Tbsp Homemade Onion Soup Mix (or 1/2 Onion Soup Mix Packet)
- 1/2 cup Milk + Additional
- 8 oz Gluten Free Noodles
- Salt and Pepper to Taste
Directions:
- In a skillet heat your olive oil until hot. Add in your turkey, onion and garlic. Cook until your turkey is crumbled and cooked through.
- In a small bowl, add in your soup base, onion soup mix and milk. Mix together until smooth. Add to the cooked turkey. Add in additional milk to your desired consistency.
- Prepare your noodles in another pan according to the box instructions. Drain. Add to your turkey and sauce mix. Serve Warm.
