I love Ratatouille for so many reasons, it’s easy to make, it’s so colorful and even better, it uses a pile of fresh vegetables to make a delicious meal. Top it with goat cheese and it’s the perfect summer dish, especially if you’ve got your garden going at home.

Now the key to this recipe is making sure all of your ingredients are sliced to equal (or about equal slices). There are two ways you can do this, you can bring out your mandoline, but I don’t always like washing all of those extra pieces. Your other method – slice everything yourself! I was recently sent a great set of knives from Ozeri to try out. The knifes are a great size and provide a great slicing power. I recently took a knife skills class, and while my slices aren’t perfect yet, I was happy to see the smooth even slices while using the chef knife. I also like that they don’t break or rust easily. They were the perfect tool for making ratatouille last night, easy to clean and great to use!

Ingredients

  • 1/2 onion, finely chopped
  • 2 garlic cloves, very thinly sliced
  • 1 cup Diced Tomatoes (canned is fine)
  • 2 tablespoons olive oil, divided
  • 2 small eggplants
  • 1 small zucchini
  • 1 small yellow squash
  • 1 red bell pepper
  • Few sprigs fresh thyme
  • Salt and pepper
  • goat cheese, for serving

Directions

  1. Preheat oven to 375 degrees
  2. In an oval pan or round pan pour in your tomatoes. Add in your onions and garlic, 1 tbsp of olive oil and salt and pepper and mix well.
  3. Slice all of your vegetables thinly, approximately 1/8-1/16th of an inch. This is pretty thin! Do your best and watch your fingers. For your pepper, cut off the crown and use a spoon to remove the inside. Remove the base and cut in half. Then thinly slice, this will provide you enough for the whole recipe.
  4. Start layers your vegetables in your pan, make sure at least half of it is in the tomato mixture. Layer them in the same order and repeat until your pan is full or you run out of vegetables.
  5. Drizzle 1 tablespoon of oil on top, sprinkle with more salt and pepper and sprinkle with fresh thyme leaves.
  6. Cut a piece of parchment paper to fit snugly on top and bake for 45 minutes.
  7. Dollop on some fresh goat cheese and enjoy!
