Gluten Free Chicken Gyros
Let’s spice it up – it’s dinner time, what do you have planned? This is an easy recipe and other than the marinading time it doesn’t take too long. This is something we’d normally go out for but I decided to make it the other day. The only problem – I should have made more! It quickly disappeared!

Gyro Meat

Ingredients

  • 2 Tbsp Minced Garlic
  • 1/4 cup Lemon Juice
  • 2 Tbsp Olive Oil
  • 2 tsp Red Wine Vinegar
  • 1/2 tsp Fresh Ground Pepper
  • 1/2 tsp Salt
  • 1 Tablespoon Oregano
  • 1 lb Chicken cut into strips
  • Green Peppers – sliced
  • Onions – sliced
  • Tomatoes – seeded and sliced

Directions:

  1. Combine the garlic, lemon juice, olive oil, vinegar, pepper salt, and oregano in a large zip top back. Mix together with your hands.
  2. Add in your chicken strips to the back and mix until well coated. Close the bag and put it in your refrigerator for 1 hour to marinade.
  3. Remove the chicken and cook in a high walled skillet for about 10 minutes until fully cooked. Add in your your vegetables. Cook down for about 20 minutes until all your vegetables are soft.

Serve on warm pita bread or gluten free naan with tzatziki! It’s a great combination of flavors and a very filling meal all on its own!
