Homemade Bacon Jam Recipe
This month is Bacon Month – and I’ve been very bad about getting my recipes up. I purchased the bacon last month and it’s been in the freezer waiting for me to get started. My schedule finally opened up, and I got a few recipes done today! So I thought I’d start with a bang – Bacon Jam! What is bacon jam? Spreadable, yummy bacon goodness. You cook the bacon, create a sauce and cook it down – when you’re done you have a concentrated bacon spread that’s great on muffins, toast and burgers!

Ingredients:

  • 3 lbs of Bacon, cut into 1 inch chunks
  • 2 Onions peeled and diced
  • 2 Tbsp minced Garlic
  • 1 cup cider Vinegar
  • 1 cup packed Brown Sugar
  • 1/2 cup pure Maple Syrup
  • 1 1/2 cups brewed Black Coffee

Directions:

  1. In a Dutch Oven cook your bacon chunks. It will take a while with the amount of bacon, but once it is browned and crispy – remove it from the pan with a slotted spoon. Place on a plate lined with paper towel and allow to cool.
  2. Pour all but 2 Tbsp of the bacon grease into a grease keeper or a jar (if you want to use it later). Add in your Onions and garlic and cook until the onions just start to get translucent but not browned.
  3. Add in your vinegar, brown sugar, maple syrup and coffee and stir to combine. Turn your heat to medium and boil together. Once it starts to boil, add in your cooked bacon.
  4. Reduce your heat to medium low heat and cook together until your liquid reduces to a light syrup. This took about 2 hours for me. Stir occasionally.
  5. Once your liquid is reduced turn off your heat and let the mixture stand for about 30 minutes.
  6. Place the cooled mixture in a food processor and blend together until smooth.
  7. Place in clean jars or containers to store!

You start with 3 lbs of bacon, and in the end you end up with about 2 pints (or 4 half pints) of bacon jam. Freeze it for up to 6 months, or use it immediately and store the extra in the fridge for up to a month (if it lasts that long!) It’s bacon concentrated – spread it on and enjoy! Put your jam in smaller containers due to the strong flavor – you only need a little bit at a time!
