Holiday Peanut Butter Bar Recipe
Peanut Butter & Company sent me a couple jars of their delicious peanut butter and some candy canes. They asked me to make a recipe… What would you make with peanut butter and candy canes?

I came up with an idea, and a second and after one failure – I came back to my first thought: Peanut Butter bars! I played with the recipe and used ginger snaps to give it a bit more of a holiday flavor. The bottom layer came out a little looser than I wanted, so I reduced the butter int he final round. What do you end up? Delicious and rich peanut butter bars with a kick of mint and ginger. They’re extremely easy and of course yummy!

Holiday Peanut Butter Bar RecipeIngredients:

  • 3/4 cup Butter Melted (1 1/2 sticks)
  • 2 cups Gluten Free Ginger Snap Crumbs
  • 2 cups Powdered Sugar
  • 1 cup Peanut Butter & Co The Bee’s Knees peanut butter
  • 1 1/2 cups Chocolate Chips
  • 4 Tbsp Peanut Butter & Co Dark Chocolate Dreams peanut butter
  • 3 Candy Canes

Directions: 

  1. In a large mixing bowl add in your melted Butter, crushed ginger snaps (I picked up a bag at Trader Joes – they work great!) Powdered sugar and Bee’s Knees peanut butter. Mix together until smooth.
  2. Smooth your peanut butter mixture into a 9″ x 13″ dish. Place in the refrigerator for 30 minutes.
  3. In a small glass bowl, add your chocolate chips and Dark Chocolate dream peanut butter. Place in the microwave and heat on medium heat in 30 second increments. Stir each time. Once smooth remove from the microwave. This should only take 3-4 times!
  4. Smooth your chocolate over the peanut butter base.
  5. Remove your candy canes from their wrappers and place them in a zip top bag. Smash them with a rolling pin. Sprinkle over your chocolate layer while it is still setting.
  6. Refrigerate another hour before cutting.
