Goat cheese and mushrooms are a mouthwatering combination. There’s something about the tangy cheese paired with savory mushrooms that I seriously cannot deny. I have had stuffed mushroom caps many of times, but never have I had them like this. These bad boys are juicy, ooey-gooey and oh so stinking delicious!
This recipe came about when I was staring at a refrigerator full of odds and ends while craving a gourmet meal. I think we all have those nights where we want 5-star cooking with no effort in our pajamas. With 4 ingredients and a 5-minute prep time, why not whip up a fancy appetizer while hanging out in leggings and watching TV?
Ingredients:
- 1 package of cremini mushrooms
- 1/2 package of goat cheese
- 1/2 diced up bell pepper
- Balsamic glaze for drizzling
Instructions:
- Gather all of your ingredients and preheat the oven to 350.
- Begin by pulling off the mushroom stems to create space for stuffing.
- Use a spoon to stuff each mushroom with the goat cheese.
- Top each bite sized cap with bell peppers and pop them all in the oven for 10 minutes or so.
- Remove the caps from the oven and drizzle with balsamic glaze and a pinch of cracked pepper before serving.
