Goat Cheese Mashed Potatoes

I love goat cheese, and I love mashed potatoes. So what would be better than putting them together? Hand mashed with a bit of a bite from goat cheese. It goes great with chicken, beef or is great just by itself!
Goat Cheese Mashed Potatoes

Ingredients:

  • 4 large Potatoes, peeled and cubed
  • 1 tsp salt
  • water
  • 2 oz Goat Cheese (or more if you want)
  • 2 tbsp Butter
  • 1/4 cup Heavy Cream
  • 1 tsp Parsley

Directions:

  1. In a medium stock pot boil your potatoes, salt and water together, until you can cut the potato cubes easily with a fork. Drain and return to the pan.
  2. Add in your butter, goat cheese, heavy cream and parsley to the pan. Use a hand masher to combine ingredients. Mash until smooth.
