As busy as we are, we sometimes don’t have time to make a good breakfast before running out the door to work. It’s because of this, I love whipping up a batch of these yummy muffins and keeping some on hand. They are quick and easy to make, filled with good for you ingredients and able to be enjoyed on the go. And since they’re gluten free and don’t have a ton of sugar in them, I don’t mind if they’re enjoyed as a snack later in the day either. And really, they’re just like a quick banana bread for one!
Ingredients:
- 2 cups Oat Flour
- 2 ripe Bananas
- 1/2 cup Sugar
- 1/2 cup plain unsweetened Yogurt
- 1 Egg
- 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Cinnamon
- Dash of salt
Directions:
- Preheat your oven to 400 degrees and grease (or line) the inside of your muffin tin.
- In your mixer bowl, add your oat flour, baking powder, baking soda, cinnamon and salt and mix until just combined. Add in your egg, banana and yogurt and mix until smooth.
- Fill each muffin tin is 2/3rds full.
- Bake for 18-20 minutes until tester comes out clean. Cool completely before enjoying.
