Years ago, when I first started dating my boyfriend, his family always made him stuffed shells for his birthday and special occasions. This is something that I continued doing as the years went on, but since there aren’t gluten free shells (easily accessible), I’d make lasagna or lasagna roll-ups. As much as I like it, most store brought gluten free lasagna noodles don’t hold up well – so I was on a quest to make my own. It’s a while until my boyfriend’s birthday, but when Red Gold sent me some of their canned tomatoes to make lasagna, it was the perfect time to try out my new recipe!

Gluten Free Lasagna Roll-Ups Recipe

Lasagna Roll-Up Ingredients:

  • 1 Batch Gluten Free Lasagna Noodles (recipe below)
  • 1 28 oz can Red Gold Crushed Tomatoes
  • 1 14.5 oz can Red Cold Diced Tomatoes with Basil, Garlic & Oregano
  • 1 lb Ground Beef, browned and grease drained
  • 8 oz Spinach Dip
  • 8 oz Cream Cheese
  • 8 oz Ricotta
  • 8 oz Sour Cream
  • 8 oz Mozzarella Cheese


Gluten Free Lasagna Noodles Ingredients:

  •  2/3 cup White Rice Flour (plus extra)
  • 1 cup Almond Flour
  • 1 cup Tapioca Starch
  • 1 tsp. Sea Sat
  • 2 Large Eggs
  • 4 Large Egg Yolks

Step 1: 

Add all of your dry ingredients in a large mixing bowl. Use a whisk to combine all of your ingredients. With your hands create a well in the center.

Step 2: 

In the middle of your well add in your eggs and egg yolks. Use a fork and slowly whisk them together. Start to bring in the flour from the outside and mix as much as you can with the fork.

When you can no longer whisk in any other ingredients, use your hands to combine and knead the dough together. You a teaspoon of water if your dough is too dry, and add in a tablespoon of white rice flour if it’s too tacky after working in the flour in the bowl.

Step 3:

When your dough is soft and pliable, break it into four equal sized dough balls.

Place on on a sheet of parchment paper and flatten into a disk with the palm of your hand. Sprinkle more white rice flour on top and with a rolling pin roll out until thin.

Step 4: 

With a sharp knife cut your now flat dough into strips about 2 1/2 inches wide and 10 inches long. Put any scraps to the side.

Repeat with 3 remaining dough balls. Recombine your scraps into a ball and repeat the process. You will have 10-12 full strips when you’re done.

Now it’s time to assemble your Roll-Ups!

Step 1: 

Preheat your oven to 350 degrees.

In a large bowl, combine your crushed tomatoes and diced tomatoes. Mix until well combined. This is a great time to add in garlic, more spices or onions and mushrooms if you like them.

In a medium bowl combine your cream cheese, ricotta, spinach dip, ground beef, 4 oz of mozzarella, and sour cream. Mix until smooth.

Step 2: 

Lay your homemade lasagna on a cutting board or clean work surface. With a spatula spread your cheese mixture over your noodles.

Step 3: 

Spoon a thin layer of your tomato sauce into the bottom of your casserole dish

Step 4: 

Roll your lasagna noodles up from one end, being careful not to squeeze the cheese mixture out of the sides.

Set them standing up into your casserole dish.

Step 5: 

Spoon more of your tomato sauce over the top of your pasta rolls – be careful not to completely submerge them! If your pasta is homemade it will become gummy during the cooking process.

Top with the additional 4 oz of mozzarella and Parmesan if you want it.

Step 6:

Bake for 30 minutes. Allow to cool for 10 minutes before serving.
