Gluten Free Fudge Brownie Recipe

Gluten Free Fudge BrowniesWhen I first went gluten free I wanted brownies. This was long before there was a good mix out there. The first recipe I tried was a disaster. Over the past few years I’ve used the Betty Crocker mix, and they’re some of my boyfriend’s favorite. But I’ve always been on the quest for good, from scratch brownies. Ones that would easily remove from the pan and of course that delicious fudge on top. These brownies are just what I was looking for. Get ready for chocolately goodness!

Ingredients:

  • 2 1/2 sticks of Butter, melted
  • 3/4 cup Cocoa
  • 2 cups Sugar
  • 2 tsp Vanilla
  • 4 Eggs
  • 1 cup White Rice Flour
  • 1/2 cup Tapioca Starch

Directions: 

  1. Preheat your oven to 350 degrees.
  2. Grease the inside of a 13 inch x 9 inch pan
  3. In your mixer, combine your butter and cocoa. When completely combined add in your sugar and vanilla.
  4. Add in your eggs one at a time and mix on medium for about 3 minutes until well combined.
  5. On low add in your white rice flour and tapioca starch. Mix for a few minutes. Scrape down the sides, and mix again on high for 2 minutes.
  6. Spread in your prepared pan and bake for 30 minutes.
  7. Remove and allow to cool at least 20 minutes before cutting.

Fudge Topping Recipe

Ingredients: 

  • 3 Tbsp Butter
  • 2 Tbsp Cocoa
  • 1 tsp Vanilla
  • 1 1/2 cup Powdered Sugar
  • 3 Tbsp Milk

Direction:

  1. In a small sauce pan melt your butter. When it is just about melted add in your cocoa powder. Mix together until combined and remove from heat. Be careful not to burn your butter!
  2. Add in your vanilla, milk and powdered sugar. Mix together until combined. You will see it start to pull together and ball up. If it balls up too much add in another dash of milk.
  3. When smooth, spread over the top of your brownies.
  4. Allow to cool at least 15 minutes before cutting!
