Gnocchi is my gluten free go-to dinner. When it’s been “one of those weeks” and I’m low on groceries, not to mention energy- I turn to gnocchi. There’s always a box of this lingering around in my cupboard waiting to be paired with a vegetable.

Gluten Free Cheesy Asparagus Gnocchi RecipeGnocchi goes well with any sauce. For this recipe, I whipped up a quick cheesy white sauce- the perfect compliment to sautéed asparagus. The ridges in the tiny potato dumplings really lock in the sauce and flavors. Start by boiling your water in a medium pot. While it warms up, start your sauce. Over medium heat, melt 3 tbsp of butter. Then, toss in your flour and continuously combine the two while the mixture bubbles up. Slowly mix in the milk preventing any lumps from forming. Allow this to cook until the mixture thickens enough to coat your utensil. Remove from heat and add in ½ cup of your favorite cheese. I recommend Gorgonzola, cheddar or Parmesan.

Next, dice up the asparagus into inch size pieces. Combine the asparagus, a tsp of butter, and a tbsp of balsamic glaze in a medium pan over medium heat. Saute the asparagus until tender.
While the asparagus is cooking, dump your gnocchi into the boiling water and cook until they rise to the surface. Each box of gnocchi lists a specific cook time, typically 5 minutes. Once the sauce, asparagus, and gnocchi are completed, combine and enjoy!

  • 3 tbsp gluten free flour

  • cracked black pepper to taste

Instructions:

  1. Prepare the gnocchi based on the package instructions.
  2. Create a cheese sauce by combining butter and flour over a medium heat.
  3. Whisk in the milk while preventing any clumps. Allow it to cook and thicken. Then, stir in the cheese.
  4. Saute the asparagus in butter and balsamic glaze.
  5. Pour the cheese sauce over your cooked gnocchi and top it with asparagus. Top with freshly cracked black pepper and enjoy!
