Gluten Free Almond MeltawaysThere’s something about almond cookies that just scream the holidays to me. Maybe it’s the hint of almond extract in Spritz cookies, but I love the flavor. It brings me back to holiday parties from my childhood.  These Almond Meltaways are super easy to make, gluten free and delicious with or without frosting!

Almond Meltaways

Ingredients: 

  • 1 1/4 cup White Rice Flour
  • 3/4 cup Tapioca Starch
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 2 sticks of Butter, at room temperature
  • 3/4 cup Sugar
  • 1 Egg
  • 2 tsp Pure Almond Extract

Directions: 

  1. Preheat your oven to 375 degrees. Prepare a large cookie sheet by greasing it or putting down your baking mat.
  2. In a medium bowl mix together your flour, tapioca starch, baking powder, and salt.
  3. In your mixer, combine your butter and sugar and cream together. Add in your egg, almond extract and mix until combined.
  4. Slowly add in your flour mixture until everything is combined and your dough is slightly sticky.
  5. With your hands roll your dough into 1 inch balls. Place them on your cookie sheet about 2 inches apart. With the heel of your hand flatten them into discs.
  6. Bake for 8 minutes. They should not brown, but will look crisp.
  7. Allow to rest 10 minutes before removing to a wire rack to cool completely.

I prefer the cookies un-iced. They are small and literally melt in your mouth when you eat them. But if you want to ice them, the frosting recipe is below.

Almond Meltaways

Icing Ingredients:

  • 1 cup Powdered Sugar
  • 1 Tbsp Milk
  • 1/2 tsp Pure Almond Extract

Directions:

  1. In a medium bowl combine all of your ingredients. Whisk together (or use a fork) until smooth.
  2. Spoon onto the top of your cookies.
  3. Allow to set for 30 minutes so they dry completely before moving or stacking.
