Farmer's Skillet
On the weekends we love staying in and having a big breakfast. It’s a lot easier to make it at home with our allergies, but we also get a lot more for our money. Last weekend I stopped at a farm and grabbed some farm fresh eggs on the way home from a family party, and another for some delicious fresh tomatoes. That just meant it was time to make a big skillet of eggs!

Polder’s Old World Market sent each blogger in the Blogger Recipe Challenge one of their items to review. I received a wooden chef’s spurtle, and I’ll be honest, I had never used a spurtle before. The handle is shorter, the flipper is larger and it is beautifully handmade out of walnut. The short handle makes it easier to get in and flip items that with a normal spatula would be difficult. It made making the eggs extremely easy to turn and I think if I had put a couple less in, it would have made a beautiful omelette! Ingredients:

  • 6-8 Farm Fresh Eggs (store bought will work too!)
  • 1 small Onion chopped
  • 1 Tomato, chopped
  • 1 cup Zucchini chopped
  • 1/4 cup Goat Cheese
  • 1 Tbs Butter
  • Salt and Pepper

Directions:

  1. In a preheated skillet melt your butter.
  2. In a large mixing bowl crack your eggs and whisk together until all one color. Add your chopped vegetables and mix until well combined. Add in salt and pepper to taste.
  3. Pour into your heated skillet and start to pull the cooked edges in until the skillet comes together.
  4. Add dollops of goat cheese on top and mix in the skillet.
  5. Cook until done and enjoy!
