On the weekends we love staying in and having a big breakfast. It’s a lot easier to make it at home with our allergies, but we also get a lot more for our money. Last weekend I stopped at a farm and grabbed some farm fresh eggs on the way home from a family party, and another for some delicious fresh tomatoes. That just meant it was time to make a big skillet of eggs!
Ingredients:
- 6-8 Farm Fresh Eggs (store bought will work too!)
- 1 small Onion chopped
- 1 Tomato, chopped
- 1 cup Zucchini chopped
- 1/4 cup Goat Cheese
- 1 Tbs Butter
- Salt and Pepper
Directions:
- In a preheated skillet melt your butter.
- In a large mixing bowl crack your eggs and whisk together until all one color. Add your chopped vegetables and mix until well combined. Add in salt and pepper to taste.
- Pour into your heated skillet and start to pull the cooked edges in until the skillet comes together.
- Add dollops of goat cheese on top and mix in the skillet.
- Cook until done and enjoy!
