Easy Swiss Steak
When the weather gets a bit colder, there are days we crave comfort food, but I don’t want to spend all day in the kitchen. Mom it Forward Blogger Network asked me to make a recipe with canned goods, and I instantly thought of making one of my favorite recipes. It’s easy and can be made in a crock pot, or in the oven. And with a couple quick adjustments I was able to make it gluten free as well!

Once the temperatures start to drop, it’s harder to find healthy and fresh fruits and vegetables. But the stores are stocked with fruits and vegetables that are ready for you to use at any point. Canned goods are often processed and packaged right from the farm or orchard, and provide you with fresh options that you can use in any of your recipes. A lot of my recipes use canned goods, either store bought or home canned. The fruits, meats and veggies you find at the store is a similar process to the home canning process I do weekly. And it’s a great alternative if you don’t want to do the home canning process. They are a great way to get healthier ingredients in your meals.

This Swiss Steak Recipe uses 2 15 oz cans of Stewed Tomatoes. I was able to find Red Gold Brand at Kroger, and they were even on sale this week!

Easy Swiss Steak

Ingredients: 

  • 2 Tbsp Olive Oil
  • 2 cans Red Gold Stewed Tomatoes, or 1 Pint of home canned stewed tomatoes
  • 1 medium onion, chopped
  • 2 Tbsp Mushroom Onion Soup Mix, or 1 package store bought soup mix
  • 1-2 Lbs steak of your choice cut into thin strips
  • 1/8 cup White Rice Flour
  • Salt and Pepper

Like I mentioned before, this can easily be made in a slow cooker, or you can make it in a covered casserole dish. Since my crock pot is no more, and I’m waiting for a new one from Santa, I actually made mine in my dutch oven!

Directions: 
1. Preheat your oven to 350 degrees2. In your dutch oven add your olive oil. Be sure to coat your sides. Heat on medium high heat until it starts to smoke. Add in your meat, and salt and pepper to taste. Cook until the sides are browned, but the meat is not cooked.

Alternatively – if you’re using a crock pot, brown you meat in a frying pan. You don’t HAVE to do this step, but I think it adds to the recipe. If you choose not to brown your meat, add it to your crock pot with your salt and pepper.

3. Add in your rice flour and mix to coat all of your meat.  Add in the canned tomatoes, onions and soup mix. Mix well.

4. Cover with lid and cook for an hour.

If you are cooking in a crock pot, 4 Hours on High or 6-8 on Low.

Serve over rice or mashed potatoes and with fresh bread and butter. It’s an easy meal that you will love!
