Strawberry and cream parfait

I love quick and easy desserts. Not only do they not take up a lot of time in the kitchen, but in the summer fresh fruit brings in the sweetness without a lot of other additional ingredients.

Good Cook sent me one of their brand new Pro-Freshional Cut Fruit bowls to review, and I knew the perfect quick and easy dessert to make. The bowl is exclusively available at Bed Bath and Beyond right now, and is something that fruit lovers are going to need to pick up.

The Pro-Freshional Cut Fruit bowl comes in three separate parts: A large outer bowl, the strainer bowl and the lid for easy storage and draining. The three piece design makes washing and draining your fruit super quick and easy. The fruit bowl is actually 7 quarts – that’s large enough for a medium to large watermelon! But what makes it unique is the strainer bowl sits above the outer bowl, allowing the juices to separate so the fruit doesn’t spoil as quickly. All you have to do is place the lid on and tip it and the juices will pour out the spout. It makes it great for prepping your fruit salads the night before the party and saving you time! I actually think this bowl will be great for washing and straining fresh fruits and veggies right in the garden. The extra water can be used to water the plants after you’re done!

So time for some quick and easy dessert. You can make this while even a quick dinner is cooking, pop them in the fridge for after dinner. This recipe will make 4 large glasses full of fruit parfait, you can always add in your favorite cookies, chocolates or fruit.

Ingredients: 

  • 1 quart of Strawberries
  • 1 cup Mascarpone Cheese
  • 1 cup Sour Cream
  • 3 tsp Vanilla Extract
  • 4 Tbsp Sugar

Directions: 

  1. Remove the stem end of your strawberries and quarter the berries. Wash your berries in your Pro-Freshional Cut Fruit Bowl and allow them to dry.
  2. In a medium bowl mix together your mascarpone cheese, sour cream, vanilla and sugar until smooth.
  3. Spoon in a large amount of your cheese mixture. Top with strawberries. Repeat until done.
  4. Chill until ready to serve!

  1. My son loves fresh fruit. I think this would be a great way to have fresh fruit cut up that he could just grab with a little less mess since the juice would be draining away from the fruit!

  2. Just plain fruit to start out with. But I want to use this in addition with my new blender to make smoothies and margaritas. Not to mention maybe a strawberry or raspberry pie.

  3. I would make some kind of fruit salad that is red, white, and blue. Add some fruit dip in it as well.

  4. I would use it for making fruit salad.My 4 kids love mixing all kinds of fruits together for snacks.They prefer fruit over cookies.

  5. We have a family get together at the lake this weekend and with strawberries in season I would make strawberry shortcake.

  6. As the “Wiggles” used to sing – Fruit Salad . . . Yummy . . . Yummy! I’d make a Fruit Salad with Strawberries and Blueberries and Yogurt with Pound Cake. Also, I’d use it for watermelon, cantaloupe and honey dew melons!
