Over the years, being gluten free has gotten easier – except when I’m on the go. When I attend events or travel, there aren’t a lot of options for me other than fruit and junk food. To keep myself fueled, I like having protein bars with me, but I’d rather control the ingredients. Before heading out to the the auto show last week, I tossed together some flavorful protein balls. They’re compact, remind you of cookie dough and are a treat your kids are going to love to find in their lunch box.
Ingredients:
- 1 cup Old Fashioned Oats
- 2/3 cup Unsweetened Coconut Flakes
- 1/2 cup Creamy Peanut Butter
- 1/2 cup Milk Chocolate Chips
- 1/3 cup Raw Honey
- 1 tsp Vanilla Extract
- 1 scoop Chocolate Protein Powder
Directions:
- Add all of your ingredients in a large bowl or your mixing bowl and mix together with a mixer until everything is well combined. *Be sure to use a power mixer or a stand mixer – doing it by hand will take a while, and getting an even mix is hard to do.
- Place your mixture in the refrigerator and chill for 30 minutes.
- Roll into 1 inch balls and store in an airtight container.
