Special Equipment needed:
- Popover Pan – Like I said I grabbed mine at Ikea but you can find actual popover pans on amazon.
- Blender
Ingredients:
- 4 large Eggs
- 3 Tbsp melted Butter
- 1 1/4 cup Milk
- 1/2 cup King Arthur Gluten Free Multi-Purpose Flour
- 1/4 cup White Rice Flour
- 1/4 cup Corn starch
- 1/4 tsp Xantham gum
- 1/2 tsp Sea Salt
- Vegetable oil
Directions
- Preheat your oven to 400 degrees. Grease the inside of your popover pans with vegetable oil.
- Pop your pan in the oven for 5 minutes to preheat it.
- In a blender combine all of your ingredients (except the vegetable oil). It should take 30 seconds to a minute but the mixture should be smooth.
- Carefully remove your pan from the oven and pour your batter into each tin until it is 2/3rds full.
- Bake for 30 minutes.
- Reduce your oven’s temperature to 150 degrees. Bake an additional 15 minutes.
- Remove from the oven and enjoy with butter! Slice into the top and slide some butter in and it will melt right away. Enjoy!
The recipe will make 6 large popovers, or if you’re using a smaller pan like the one from Ikea it will make 12! I like the smaller size.
