Ingredients:

  • 1 lb boneless skinless Chicken Breast
  • 1 10 oz bag of frozen mixed Vegetables
  • 32 oz chicken broth (or homemade stock)
  • 2 tbsp Butter
  • 1/4 cup white rice flour
  • 1 package gluten free pie crust (or homemade crust)
  • 1/4 tsp rosemary
  • salt and pepper

Directions:

  1. In a medium pot boil your chicken in water until fully cooked. This will take about 30 minutes.
  2. Preheat your oven to 350 degrees.
  3. In a medium sauce pan melt your butter. When it is completely melted and starts to bubble add in your white rice flour. Mix together until it forms a paste. Add in your chicken broth and stir together. Bring to a boil. Add in your frozen vegetables and cook for 5 minutes.
  4. Chop your cooked chicken and set aside.
  5. Roll out your gluten free pie crusts and add to a pie pan or cut tops for small ramekins.
  6. Add your chicken to the pie pan or ramekins. Ladle in your vegetables and sauce.
  7. Cover with pie crust.
  8. Bake for 45 minutes. Enjoy!
