Easy Cheesy Potato Bake

A few summers back I was up north on business and we stopped at a smal restaurant for breakfast. I’m not a huge fan of breakfast foods, but they had a cheesy potato bake for a side that was to die for. After the trip I came home and figured out how to make it myself.

It’s full of cheese, full of goodness and so easy to make. I love making it as a side to go with Barbecue Chicken and some veggies. But it would be great for breakfast too.

Ingredients

  • 1 bag of frozen shredded potatoes (let sit out for about 30 minutes before preparing if possible)
  • 1 16 oz container sour cream
  • 1 8 oz package of cubed ham (optional)
  • 2 cups shredded cheddar

Directions

1. Preheat your oven to 350 degrees.

2. In a large bowl mix together your shredded potatoes, ham and cheese. It is easier if your potatoes are a little thawed. Mix them as much as possible.

3. Add your sour cream and continue to mix it together. If you don’t have enough space in your bowl you can do this in the casserole dish.

4. Put your mixture into a 9″ x 13″ glass casserole dish. Smooth it over with your spoon and press down just a little.

5. Bake for an hour – depending on how crispy you want your bake! Season to your liking 🙂
