Strawberry Chocolate Kiss Cookies Gluten Free Recipe

There are so many delicious flavors that are associated with Valentine’s Day and two of the most iconic flavors are strawberry and chocolate. While you can send your best friends chocolate covered strawberries, we love making treats at home and sharing them with our friends and family. This personal touch can take your next friends night, kids Valentine’s Day Party or Galentine’s get together to the next level.

We love Chocolate lava cake, and this year Hershey has released a new flavor of their iconic kisses and inside is a molten lava that gives you that rich flavor whenever you want it. Wrapped in heart decorated foil, the Lava Cake Kisses are dark chocolate that have a liquid center which is made from real Hershey’s rich, creamy chocolate.

Strawberry Chocolate Kiss Cookie Recipe

Working with the favorite flavors of of strawberry and chocolate, we decided to take a twist on one of a family favorite cookies – blossom cookies. Those crackled cookies coated in sugar and topped with a Hershey Kiss. Normally, anything we want fruit flavor in we would use fresh fruit. But since strawberries would be full of moisture and possibly ruin the cookies, we decided to make pudding cookies. You can grab boxed pudding flavors anywhere, but we are partial to the natural pudding mixes that have dehydrated fruit inside, so we get the full fruit flavor without ruining our cookie dough!

Ingredients:

  • 2 1/4 cups Gluten Free all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup vegetable shortening
  • 3/4 cup packed light brown sugar
  • 1/4 cup white sugar + Additional Sugar on the side
  • 1 (3.4 ounce) package instant natural strawberry pudding mix
  • 1 teaspoon vanilla extract
  • 2 eggs
  • Hershey’s Lava Cake Kisses

Directions: 

Preheat your oven to 375 degrees and grease or line a cookie sheet with a baking mat or parchment paper.

In your stand mixer add in your vegetable shortening, sugars, and pudding mix. Cream together until smooth. Add in your eggs one at a time and continue to mix until fully incorporated.

Add in your flour and baking soda to your wet mixture and mix until fully incorporated. Scrape down the sides and continue to mix for another 1-2 minutes.

Roll your cookie dough into 1 inch balls and roll in extra sugar and set on your prepared cookie sheet leaving 1 inch between each cookie ball. Bake your cookies for 8-10 minutes until just starting to brown on the edges.

While your cookies are baking, unwrap approximately 3 dozen Lava Cake Kisses and put them in a bowl. Feel free to enjoy a couple while you wait as well – you will love it! 

Let the cookies cool for a few minutes and add an unwrapped kiss to the center to each cookie. Press down to secure the cookie, but don’t push too hard to go all the way through the bottom!

You will be adding the chocolate chips into the cookies while they’re still warm, this will make them melt a bit as the cookie cools. But it is what secures the kiss to the cookie. If you want them to stay in their perfect kiss shape you can add them after the cookies are completely cool – but there is no guarantee they will stay in the cookie.

Now, the kisses do get a little melted in the process but what we love is the inner liquid chocolate stays liquid even after the cooling! You will have delicious and moist cookies that have a kick of strawberry and still give you a chocolaty surprise when you bite into them. Your friends and family will love these treats and it’ll be that extra bit of love you baked in that is the special ingredient.
