It’s candy month! I’m starting a little late but I have a some great recipes using candy and making candy from scratch. To start outlet’s go with an easy recipe for some cookies that end up tasting like a giant peanut M&M. Not only are these easy, but they are gluten free and great with a tall glass of milk!

Ingredients

  • 1 cup Dark Brown Sugar
  • 1/2 cup Granulated Sugar
  • 1 1/2 sticks Butter (softened)
  • 1/2 cup Dark Chocolate Peanut Butter
  • 1 Egg (room temperature)
  • 3/4 cup White Rice Flour
  • 1/4 cup Tapioca Starch
  • 1/4 tsp Baking Powder
  • pinch of Salt
  • 2 Small bags of regular M&Ms

Directions: 

  1. Preheat your oven to 375 degrees.
  2. In your mixing bowl combine your sugars, butter and peanut butter and let them mix until they are light and fluffy.
  3. Add in your eggs and mix until combined.
  4. Slowly add in your flours, baking powder, and salt.
  5. Scrape down the sides of your bowls and fold in your M&Ms.
  6. Bake for 8-10 minutes on lined baking sheets and allow to cool for about 10 minutes before transferring to cooling racks.

They are so quick and easy to make, and the dough is almost mousse like, and bakes nice fluffy cookies. You can sub in any candy you want but the combination of the candy and the dark chocolate peanut butter makes it taste like a giant peanut M&M! Nom!
