Few things go together as well as peanut butter and chocolate. So of course the new Dark Chocolate Dreams peanut butter that Peanut Butter and Company sent me to review is delicious! Seriously, how could it not be?
Did you know that March is National Peanut Butter Month? To celebrate Peanut Butter and Company has released their new Dark Chocolate Dreams Peanut Butter as well as a new cookbook – 31 Days of Dark Chocolate Dreams: A Month of Delicious Recipes. The cook book has recipes for Stuffed French Toast, Whoopie Pies, Marbled Pound Cake, Tiramisu and many many more. All use Peanut Butter and Company’s Dark Chocolate Dreams.
All of the recipes look delicious, and I could adapt any to be gluten free. But the first recipe I had to try was the first gluten free cookie that I was successful with. This recipe is based on the one that my Great Great Aunt Stena (yes – that’s two Greats!) gave me after I was first diagnosed with Celiacs disease. It’s simple, it’s easy and free from flour or anything else.
Since Peanut Butter & Company’s products are also gluten free, certified vegan and kosher, has no cholesterol, no trans fats, no hydrogenated oils and no high-fructose corn syrup – so how could this be a bad thing? There is only one problem I have with Peanut Butter and Company’s products – it hardly makes it into recipes or on my bread – most of the time I just eat it with a spoon… That has to be bad for me right? When I used it in Aunt Stena’s recipe – not only was it delicious, but the cookie dough actually is so good it makes your eyes roll back in your head… dangerous cookies right here! Note – I did tweak her recipe some for this, but I think I did it justice!
Ingredients:
- 1 cup Dark Chocolate Dreams Peanut Butter
- 1 Egg
- 1 cup Sugar
- 1 tsp Vanilla Extract
- 1/4 tsp Sea Salt
Directions:
- Preheat your oven to 350 degrees and prepare a baking sheet for your cookies by spraying with a cooking spray or using a baking mat.
- In your mixer add in your egg, sugar, vanilla and sea salt. Cream together until the mixture becomes light and almost fluffy.
- Add in your Dark Chocolate Dreams Peanut Butter and mix until well combined.
- Scoop 1/4 inch cookie dough balls onto your cookie sheet leaving 1 1/2 inches in between. With the tines of fork press the cookies making a grid shape.
- Bake for 10-12 minutes for soft chewy cookies, and 12-15 for crunchy cookies. Great with a tall glass of milk!
