Creamy Ham and Potato Casserole

Ingredients:

  • 3 medium Potatoes
  • 1 small onion, chopped
  • 1 bag frozen corn thawed
  • 5 oz chopped ham pieces
  • 5 tbsn Cream of Chicken soup base*
  • 1 1/2 cups milk*
  • 2 cups shredded cheese (Cheddar or your favorite)

Directions:

  1. Preheat your oven to 350 degrees.
  2. Peel your potatoes and chop them into 1/2 inch cubes. Boil in slightly salted water for 5 minutes until they start to get tender. Remove from the water and add to a large bowl.
  3. In the same large bowl add in your onion, corn, ham and cheese. Mix together until combined.
  4. In a small bowl add together your soup base and your milk. Mix together until well combined and smooth. Pour over your potato mixture. Mix until well integrated.
  5. Add to a 13″ x 9″ casserole dish and bake for 45 minutes.

*If you’re not worried about being gluten free use a can of condensed cream of chicken soup and 1/2 cup milk!
