I found myself in a weird situation this morning – we wanted breakfast, french toast but I didn’t have any gluten free bread! Instead I turned to some delicious Angel Food Cake and jazzed it up a little. More a dessert than breakfast, and a great way to start the day with a good sugar buzz!

Ingredients:

  • 8 1 inch slices of Gluten Free Angel Food Cake
  • 4 Eggs
  • 1/4 cup milk
  • 2 Tbsp Sugar
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 2 Tbsp Cream Cheese
  • *Toppings: Fresh Berries, Powdered Sugar, Syrup
  • 2-4 Tbsp Butter

Directions:

  1. In a small bowl place your cream cheese and microwave on high for 30 seconds until soft and spreadable.
  2. Slice your Angel Food Cake into 8 1 inch slices
  3. Spread about 1/2 Tbsp soft cream cheese on 4 slices of your cake and place another slice on top.
  4. In a medium bowl whisk together your milk, eggs, sugar, cinnamon and nutmeg. Pour the mixture in a shallow dish like a pie plate.
  5. Place each of your cake sandwiches in the dish and allow to sit in the egg mixture for about 1 minute. Rotate to the top, bottom and side and let each side soak in the mixture.
  6. In a large skillet melt 2 Tbsp of butter over medium high heat. Once melted, add in your cake sandwiches and cook until each side is brown. Rotate on all sides until well browned and the outside is cooked well.
  7. Remove from pan, top with syrup, berries, powdered sugar and whatever you want. Enjoy!
